Twice this fall, I’ve felt on the edge of misery: under the weather. I’ve started sneezing and knew a cold was descending around me.
This recipe has saved me both times. There’s something about the combo of sweet potatoes and apples that hulks up my immune system.
Indian-Spiced Sweet Potatoes and Apples
Preheat the oven to 375 and put a rack in the top third of the oven.
Cut up 4 sweet potatoes into half-inch chunks. Put them in a big mixing bowl and toss them with:
-a big splash of olive oil
-a medium splash of maple syrup
-about a teaspoon each of fennel seeds, coriander, turmeric, cumin, and cardamom
-and a good shake of salt and grind of black pepper
Put the taters onto two rimmed baking sheets in a single layer. Roast for 20 minutes.
While they roast, chop up two apples into one-inch chunks. After the taters have roasted for 20, take them out of the oven, turn them over and add the apple chunks. Slide everything back in. Bake for another 15.
Add to my anecdotal evidence by telling me if this recipe helps YOU scare away a cold. I’ve also heard that sweet potatoes make it harder to be depressed, blue, or seasonally affected with grey gloom.
